Sweet Low FODMAP Pecans
Wow, it's been a little while since I posted a recipe! I don't have a huge excuse, other than I've not really been experimenting in the kitchen a huge amount lately. I'm holding off baking, because if I bake, I'll want to eat all the yummy things I make. Summer is coming, so that's not a good idea! I've also been extremely busy the last few months, so time/energy to get creative has been less available. I've got a good base of recipes I can stick to now, and I'm pretty pleased with them!
A few weeks ago though, I was watching Deliciously Ella's youtube channel, and she posted a recipe for sweet almonds. It was so easy, and they looked so good! I can't handle too many almonds though, so I gave it a go with pecans. It was a huge success, and everyone who's tried these has said they're delicious! The winning combination is that they're both entirely low FODMAP, and they're healthy. The perfect low carb, but still satisfying snack, I've been making a batch of these and snacking on a handful whenever I get an urge for something sweet.
So easy to make, all you'll need is:
200g of pecans4 tbsp of pure maple syrup.1 tbsp of cinnamon1 pinch of salt
Turn the oven on to 200°C, and grab a baking tray. Line the tray with baking paper, and poor the pecans onto it. Drizzle the maple syrup and sprinkle the cinnamon and salt on, and mix them all together. Ensure that everything is well coated, and place them in the oven for 20 minutes. 10 minutes into their cooking, shake them about so that they cook through evenly. I recommend checking up on them about 15 minutes in, because sometimes 15 minutes has been enough time, other times it needs the full 20.
