Healthy Chocolate Chip Pancakes

How can you mix the words healthy and chocolate chip pancake together? This is how!
I woke up at a stupid hour on this morning, and lay in bed thinking about what I was going to make for breakfast. All I wanted were pancakes, but better yet, chocolate chip pancakes. I'm a chocolate fiend (#swissmuch), so these were right up my street.
The best thing about these is how easy and quick they are to make. All you'll need is:
1 banana2 eggs1/4 cup of rice flour (or any other flour you like)1/2 cup of dark chocolate chipstoppings of your choicecoconut oil for cooking
Method:
In a blender, add the banana, two eggs and flour, and blend until smooth.Pour the contents into a bowl, and add the chocolate chips, and mix them into the mixture.Melt some coconut oil into a non stick pan on a medium-low heat, and poor in a large table spoon of the mixture.Cook for 1-2 minutes, or until it looks cooked to the extent you'd like (i generally just take a peak underneath!)Flip the pancake and cook on the other side. It usually doesn't need as long on that side.Cook the rest of the mixture in this way, serve them on a plate with the toppings of your choice. I love blueberries and a sprinkle or pure maple syrup!
