Low FODMAP Curry Paste
I love curry so much. It's a staple dish, easy to make, and tastes good every single time. When I went on the Low FODMAP diet a few weeks ago, it became clear that I wouldn't be able to make a curry the same way that I used to. I'll admit, I'd never made a curry paste myself before. I was still using curry paste from the shops. But obviously all of those pastes include onions, garlic, and a whole host of other things that I'm not supposed to eat.So off I went, looking for a way to still be able to create one of my favourite dishes in a Low FODMAP way! This probably was a blessing in disguise really, because it turns out that making curry paste is really not hard. I don't know why I'd never tried it before!
You'll need:1 tsp Ginger1 tsp Paprika1 tsp Coriander1 tsp Crushed Chillies1 tsp Cumin1 tsp Salt1 bunch of Spring Onions, green parts only1 tsp Garlic Olive Oil6 tsp Fish Sauce1 Lime
Throw all of the ingredients together into a food processor, and blend!
And that is it! Simple as that. This recipe will make you about 4 servings, but it depends how hot you like your curry. Add more or less to your dish as you cook, depending on your preferences. You can then freeze what ever paste you have left for later use. You can obviously add and take away any of the herbs and spices to make the paste taste to your liking. I'm so glad I had a go at making a curry paste, because now we can go back to eating one of our favourite meals!
