Peanut Butter Cookies
On a dreary, rainy, horrible August day, I was fed up of trying to get my websites to do what they were supposed to (they weren't) and I headed to the kitchen. I had no idea what I was going to make, so I took a look at what I had in the cupboards. The main thing that stuck out was my huge pot of Peanut Butter. I freaking love peanut butter. I could eat it with a spoon.
And thus the peanut butter cookies were born.
You'll need:2/3 cup of Brown Rice Flour1 tsp Baking Soda1/2 cup Soft lactose free butter1 cup natural peanut butter1 cup coconut sugar1 egg2 tsp Vanilla Extract
Heat an oven to 180°CStart by mixing together the wet ingredients (butter, peanut butter, egg, vanilla extract) and mix well.Add in the rest of the dry ingredients.Take small amounts of the mixture and make them into little balls, squishing them onto baking paper on a tray.Place the tray in the oven and bake for 8-10 minutes, or until they start to go brown.Take them out and let them cool, and then try one out!
