The Best Vegan Chocolate Chip Cookie

A bit of an obnoxious title perhaps? Maybe it is, but when I made these the other day, I couldn't believe how good they tasted. My boyfriend proceeded to eat three.. so they must be good? These are definitely one of the best vegan chocolate chip cookies (can you tell I'm a chocolate fanatic?!) I've ever had!

You'll need:

6 tablespoons of melted coconut oil3/4 cup of coconut sugar1/4 cup of almond milk2 teaspoons of vanilla1 and 1/2 cup of flour (I used brown rice flour)3/4 cup dark chocolate chips

How to make them:

1) Heat up your oven to 180°C2) Mix in your coconut oil with the coconut sugar, almond milk and 1 tablespoon of the flour. Mix it all together for about 2 minutes until it forms a smooth mixture. It will look a little bit like caramel.3) Add the vanilla, 1 cup of your flour and mix.4) Add the rest of your flour (1/2 cup) and mix again! (So much mixing OMG) (It'll be worth it I promise)5) Add your chocolate chips!6) Place little balls of your mixture onto a baking tray, lined with baking paper, and flatten them. Don't make them too big, or they'll stick together as they spread. I tend to put my mixture onto two seperate trays and bake them that way. It makes everything less crowded.7) Place them in your oven for 9-10 minutes until they're going brown and slightly crispy on top.8) Take them out of the oven and let them cool down. These cookies need to cool down for quite a long time, as they're not the most solid things in the world. They do harden up as they cool though!
