Sweet Potato Wedges
Anyone who knows me will know that sweet potato is my all time favourite food. I could eat it day in, day out. It was the one thing that when I went on the Low FODMAP diet, I didn't cut down on. When you're on the Low FODMAP diet you're supposed to eat only 1/2 Cup of it at a time... I just can't do it! It's my favourite thing... and when I cut everything else out and had no reactions after eating my good ol' sweet P, I figured I'd just carry on. No regrets!
Sweet potatoes are so good for you, it's incredible. They're high in potassium and magnesium which both help to regulate blood pressure. They're high in Iron and Calcium and, a special one: manganese which helps to boost your metabolism and heal wounds! They also contain more fibre, and less carbs. They're just a winner in all aspects in my eyes: especially when they taste so great. There's a funny thing about sweet potato though; not everyone likes it. My dad doesn't. He really doesn't at all! My mum and I could eat it forever.
Sweet potato wedges are a weekly staple in my kitchen. They go with so many other foods! I like to roast mine in the oven on a Sunday night with a big old roast chicken. Sometimes we eat them with salmon. Sometimes its with my Low FODAMP meatballs (recipe coming soon!).
For sweet potato wedges you'll need:1-2 medium sweet potatoes1 tbsp of smoked paprika1 tsp ground cinnamon4 tbsp coconut oil1 tsp basilSaltPepper
Method:Switch the oven on to 180°CRinse your sweet potatoes under waterChop them up into wedges, with the skin on! (its where all the nutrients are).Spread them out onto a baking tray, covered by aluminium foil or baking paperMelt your coconut oilAdd in the herbs and spices and mixSpread the coconut oil mixture evenly over the sweet potatoesGrind salt and pepper over the potatoesPlace them in the oven for 40 minutesTake them out, and enjoy!
This is honestly one of the easiest recipes ever, and it tastes incredible. I really hope you enjoy them!
