Food photography is hard! This cake is really yummy (I'll get to that later) but it's not the most attractive looking cake ever... It's just a good ol' chocolate cake. I have zero skills in cake decorating (yet), so I won't be a contender for the Bake Off anytime soon. I've been putting off doing this blog post for a while because I didn't have a clue how to photograph it. I tried loads of different things: colourful backdrops, in the room, flowers, utensils, etc, etc, etc but it was all looking...blaaah. Then I took a step back and just thought: keep it simple. It's a simple cake. It should have simple photographs. And then these happened! #thankgoodness

Low FODMAP Chocolate Cake

I'm trained in fashion photography and portraiture, so photographing food is a whole new ballgame. It doesn't move; you have to move it. It doesn't smile; you need to make it look pretty. It has strange textures. I'm learning as I'm going what works, and I'm really enjoying it!But anyway, back to CAKE.

When you go dairy free, or gluten free, or low FODMAP, or all three at once, eating cake seems like it might be a thing of the past. I'm not going to lie to you here... I've never been an enormous fan of cake. Growing up we would have bake sales every Friday after school, and I never really wanted any. I often found cake pretty dry and I gravitated towards pie. But pie requires pastry, and that's something I've yet to try and create (It's next on the list so stay tuned for Olivia's attempts at GF, DF, low FODMAP pastry adventures). When I began to bake however, cake was something that became more of a challenge to me than anything else. I was curious and wanted to see if I could make one. I've made a faire few now, and they've been good! This was my first "cake creation" though.

Im a chocolate addicts, so creating a chocolate cake seemed a pretty obvious choice! This cake is really simple to make as well as being moist, sweet and chocolatey. It requires a LOT of eggs, so Vegans look away now. However it is Low FODMAP, gluten free and dairy free!

To make this cake you'll need:6 Eggs1 Cup Coconut Oil150g of 85% Dark Chocolate 1 Cup of Coconut Sugar2/3 Cup of Buckwheat Flour

Low FODMAP Chocolate Cake

Heat the oven to 180°CMelt the coconut oil and dark chocolate in a pan on a medium heat, stirring together.Add your eggs to a bowl and whisk them together.Add in the coconut sugar and the melted chocolate and coconut oil. Mix them well.Add the buckwheat flour, and mix till fully incorporatedPlace in the oven for 40-45 minutes. You'll know its done when you put a fork in and it comes out clean.Take it out, let it cool and enjoy!
